Chestnut honey is subject to a slow crystallization process like acacia and is therefore always liquid.
Along with a few other honeys, the chestnut has an intense bitter aftertaste which divides its admirers from its detractors.
In any case it is a honey rich in tannins, has an extremely high antioxidant capacity and contains very high levels of phenolic acid: these properties make it a food able to help fight the harmful effects of free radicals caused by pollution, medicines, smoke , pesticides, sun rays. Our production sites are in Valle Po and Val d'Ala.
- Color: the color is more or less dark amber, with reddish/greenish hues in the liquid honey; brown when crystallized.
- Revolutionary: of sweet taste; normally acidic; decidedly or very bitter; tannic and astringent.
- Smell: the smell is very characteristic; aromatic, pungent, acrid, vegetal and herbaceous, sometimes of wood, of tannins, phenolic, bitter, of boiled chickpeas, of wet cardboard, of Marseille soap.
- AROMA: it is at least intense; characteristic, similar to the smell; it is very persistent especially in the bitter component.
